John and Kristyna's wedding was absolutely beautiful. They were sooo cute and grinning so wide for the entire ceremony. It was a very sweet and godly wedding and it was so nice to be a part of. What a special day :o)








We got back late Saturday night and found that Karyna and Duane and Kevin and Leah were going to pop by on Sunday, so we went to my parent's place and watched "Take the Lead." It was pretty good, but we'd seen Step It Up fairly recently in the theatre and I liked it more. I just can't believe that the lead girl in Step It Up is also one of the girls in Take the Lead! CRAZY! The movies came out so close together I wonder if there was some overlap in filming for her? Anyway...
Sunday we slept in (it was REALLY NICE) and did a bit of grocery shopping and then Karyn and Duane and Kevin and Leah showed up and we chatted for a bit and then went up Fly Hills to Wallensteen Lake. It's about a 30-40minute drive on really bumpy gravel.. man was it nice to drive on cement when we came back. It was really pretty but the sun was hidden by smoke or clouds or something! Dave brought my parent's inflatable boat and fished off of it! He was too cute!! He caught two nice trout and cooked them up for all of us have. (he makes the best trout!)




Mollie rolled in a cow pie!!!!!! So Dave threw her in the lake to clean her off!


They didn't end up camping up there 'cause there wasn't a fresh water source and they hadn't brought enough water (which we didn't mind since that meant they could visit with us longer! *evil laugh*) OHh and we got icecream before we went up the mountain and Duane, Leah, and I all got Chocolate Raspberry Delight.. and was it ever delightful!?!! MMMMMMMMMMMMMmmmmmmmmmmmmmm We came back to our place and watched The Mask of Zorro 2... and all I have to say is... if you haven't put yourself through the torture of watching it, please, take my word and DON'T. We had heard it was lame.. but it wasn't even really lame it was just plain BORING.
Monday morning the clan left and Dave went to help his parent's move into town (yay, they live in town now!!) and my family happened to be going to Vernon, so I ventured off with them. It was a nice day.. afterwards I saw Dave's parent's new place. It's quite small, but very nice :o) and then we went and watched Canadian Idol at my Grandma H's place. We'll see who the final two are tonight! Pretty crazy, we've been following it most of the way through. We would have really liked to have seen Steffi D. do last night's show... well.. we really wanted her to WIN too, but what can ya do but vote.. which we did!
So today is Tuesday. I worked a bit late today to get caught up on the Sicamous finances.. and then I went to Askews to get some bamboo shoots for the Thai Chicken Curry recipe I was going to make to use up the rest of the coconut milk I had left over from the Butter Chicken I made awhile back (I froze the left over coconut milk). So now I'm just waiting for Dave to get home so I can eat the feast I prepared ;o) From the little tasting I did, it's pretty good!!
Thai Chicken Curry with Coconut Milk
1/2 pound green beans, ends trimmed (I used a cup of frozen green beans)
2 boneless, skinless chicken breast halves (10 to 12 oz. total)
1 tablespoon salad oil
1 to 1 1/2 tablespoons prepared Thai red curry paste (or 1 tablespoon minced fresh ginger, 1 teaspoon curry powder, 1 teaspoon chili powder, and 1/4 teaspoon cayenne)(I used the spices, not the paste)
1 can (14 oz.) reduced-fat coconut milk (I used a can less 1/4 cup that I used in my butter chicken, but I think it would be better with the whole can 'cause I wouldn't have minded more sauce)
1 teaspoon sugar (I didn't put this in)
1 can (8 oz.) sliced bamboo shoots, rinsed and drained
Fish sauce or salt (I didn't put this in either)
(I added 1/4tsp of corn starch but I don't know if I really needed to)
1. Slice beans diagonally into 1 1/2-inch lengths. Cut chicken into 1-inch cubes. Place a 10- to 12-inch frying pan over high heat. When pan is hot, add oil and beans; stir-fry 2 minutes.
2. Add chicken and cook, stirring occasionally, until lightly browned, about 4 minutes. Add curry paste, coconut milk, and sugar. Reduce heat to low and stir until curry paste is well blended. Add bamboo shoots; continue cooking until hot, 3 to 4 minutes. Add fish sauce to taste. (I'm serving it on rice)
Yield: Makes 2 or 3 servings
